Sous Chef

Full-time (48 hours per week)
A fantastic new opportunity to join a brigade of professional chefs to continue pushing Gravetye forward in maintaining the standards of the Michelin star status and four red star status set by the AA and Relais & Châteaux.
Be ready to show your skills, creativity and passion supporting the Executive Head Chef in the creation of seasonal dishes using the best ingredients directly from our kitchen garden whilst assisting in the smooth running of the busy kitchen.
Responsibilities:
- Menu planning: Assisting The Executive Head Chef with the continuing development of the menu
- Food preparation: Ensuring food is prepared efficiently and to the highest standard
- Managing staff: To lead by example and maintain the passion and enthusiasm of the team, nurturing and encouraging their development and skill set
- Inventory: Ordering ingredients and keeping track of stock levels
- Kitchen cleanliness: Ensuring the kitchen is clean and meets all health and safety regulations
- Training: Onboarding new staff members and providing ongoing training within the kitchen brigade in conjunction with the Executive Head Chef
- Scheduling: Creating work schedules for the kitchen team
- Conflict resolution: Resolving conflicts between kitchen staff
Required skills / Experience:
- To have previous experience in a Michelin Star kitchen brigade in a similar position
- To be committed to being part of a driven team that is aiming to achieve quality and high standards in the kitchen.
- To have good all round experience and professionalism to the level of one Michelin Star
- To be passionate, keen to share your knowledge and learn new skills
- To be able to communicate with colleagues and managers in English
- To demonstrate the ability to respond to business needs and work under pressure.
Benefits:
- Salary: £37,000 - £40,000 per annum subject to experience
- 28 holiday days inclusive of bank holidays and a day off after 1 years service
