Come and join a dynamic team of professionals for the opening of our new dining room at Gravetye Manor.

Our newly appointed Restaurant Manager is looking to recruit motivated and passionate candidates to take part in the opening of our 60 seat Michelin starred restaurant with uninterrupted views over our famous gardens.

Be ready to show your skills, learn from us all and deliver an impeccable service, yet in a friendly atmosphere.

 

Responsibilities:

  • To be on duty on time and always be presented in a clean and smart manner, ensuring uniform is smartly dressed and shoes are polished.
  • To maintain the standards of Gravetye in keeping with the four red star status set by the AA and Relais & Châteaux and one Michelin star.
  • To serve food prepared by our Chefs and assist in clearing tables.
  • To be aware of how each dish is prepared and the ingredients used, developing your knowledge as the menu changes.
  • To prepare mise-en-place both in the back office and in the dining room allowing a smooth running of service
  • To maintain the cleanliness of the working area at the highest level and monitor regular cleaning schedules.
  • To understand the importance of taking care of equipment.
  • To report all comments, complaints and feedback to the relevant manager on duty.
  • To adhere to strict precautions to safeguard hotel and guests property and to inform your manager immediately of any discrepancies, breakages and losses.
  • To attend and participate in any training and personal development schemes as recommended by your manager.
  • To liaise with other departments ensuring good communication and co-operation at all times.
  • To carry out any other reasonable duties as requested by management.
  • To comply with all the company’s Health and Safety requirements.
  • To have a full knowledge of and be able to act upon the Fire procedures as laid down in the Hotel Fire Procedure in compliance with the Fire Precautions Act 1971, and to attend Fire Training as requested.

 

Required skills / Experience:

  • To be committed to being part of a driven team that is aiming to achieve quality and high standards throughout the hotel.
  • To be passionate, keen to share your knowledge and learn new skills.
  • To be able to communicate with guests, colleagues and managers in English.

Sommelier

A fantastic opportunity has arisen to join the beverage team at Gravetye Manor, a Relais & Châteaux property and Michelin starred restaurant situated in the heart of Sussex. We are looking for a talented Head Sommelier to take over from Alexis who is leaving us. After building a stunning new dining room, the hotel re-opened in May 2018. Alexis has created a wide wine list composed of biodynamic, organic and artisan wines. We offer around 420 different wines, all stocked in our safe cellar. We also offer a large range of wines by the glass to cater for every palate. 

 

Responsibilities:

The Head Sommelier is responsible for the service of wines in the restaurant as well as in the bar and lounges.

There is a Sommelier team of four in total: Head Sommelier, 2 Senior Sommeliers and 1 Commis Sommelier.

We are looking for a great personality with a high knowledge of wine, spirits and cocktails, but above all someone with exceptional customer service skills.

We run a very professional hotel and have won many awards! The wine list has a big potential to be one of the best in the UK, and to be rewarded as such.

You will report to the Restaurant Manager and be part of the restaurant, sommelier and bar team of 25 passionate co-workers.

The hotel is busy throughout the year and in summer spills out on to our beautiful gardens.

 

Required skills / Experience:

We are currently looking for a charismatic, charming and passionate individual to join and lead the Sommelier team at Gravetye Manor.

 

This is very much a front of house position so a need to be excited to interact with guests as well as bringing natural management skills to motivate and develop a high performing team is essential. This is a fantastic opportunity for someone to join a successful team and take the next step in their hospitality career.

 

The following criteria are preferred:

  • Experience as a Senior Sommelier/Assistant Head Sommelier/Head Sommelier in a busy restaurant/hotel environment.
  • Knowledge of wines, spirits and cocktails is essential for this role.
  • Being able to lead, train and develop the sommelier team to deliver the SOP’s.
  • Being able to keep stock records, order from suppliers and build trustful relationships.
  • Being able to take ownership of a busy dining room and serve the guests with the standards expected from a Michelin Star restaurant.

  • To ensure the dining room is clean, appropriately set up, at a comfortable temperature with a strong mise en place to go through breakfast service.
  • To be aware of guests’ dietary requirements that may affect the offer.
  • To ensure the breakfast buffet is looking smart and generous with appropriate labels.
  • To greet guests in a pleasant manner, using their name if possible, and sit them at a convenient table.
  • To assist the Breakfast Supervisor or Headwaiter in taking hot course orders and ensure starters are cleared and main course served in a timely manner.
  • To clear tables discretely ensuring the dining room is looking smart at all times.
  • To replenish the buffet throughout service.
  • To liaise with other departments ensuring good communication and co-operation at all times.
